Shrimp Ceviche (Ceviche de camarones)

A favorite way to eat fish is a dish that I first ate in Mexico, then in the Dominican Republic, and finally all over Panama – ceviche. For those of you who aren’t familiar with this delicacy, it consists of raw fish which is marinated in lime or lemon juice which “cooks” the fish until it turns white. The acidic juice tones down the fishy taste. It can be kept in a covered container for a week providing plenty of appetizers for the evening cocktail hour. Continue reading

Scalloped Scallops

During the winter some of the fisherman on Deer Isle rig up their boats, brave the frigid seas and bring back scallops. It’s not unusual to see a pick up truck with the back open and a sign advertising their fresh catch of scallops and fish along side one of the better traveled roads. The seafood is fresh, local, inexpensive, and purchasing it helps a local to survive during the cold months.
