Pollo (Chicken) Enchiladas Suizas

The word “suizas” means Swiss style and this Mexican recipe combines the traditional flavors of the cuisine with a rich sauce. It’s the perfect way to use up leftover chicken. This is a crowd pleaser for 4-6 people. Serve it with a green salad, Spanish rice and refried beans, and beer. Bowls of chopped green onion, chopped cilantro, and sour cream should accompany the food so that each may add according to their personal tastes. This is a tangy and flavorful comfort food. The sour and whipped cream help to mellow the heat of the Jalapeno peppers. It’s delicious!

Everyday Cinco de Mayo in Downtown Sarasota

Downtown Sarasota was one of the reasons we chose to move to this area. It’s an approachable, walkable downtown where tourists and residents can safely stroll enjoying the multitude of opportunities to shop in the small stores, to dine in an ethnic restaurant, or to listen to music in a nightclub. There are special events, festivals, and parades all year round and each Saturday morning there is a Farmers’ Market. It’s a vital hub for this city of approximately 50,000 residents. Shrimp Ceviche (Ceviche de camarones)

A favorite way to eat fish is a dish that I first ate in Mexico, then in the Dominican Republic, and finally all over Panama – ceviche. For those of you who aren’t familiar with this delicacy, it consists of raw fish which is marinated in lime or lemon juice which “cooks” the fish until it turns white. The acidic juice tones down the fishy taste. It can be kept in a covered container for a week providing plenty of appetizers for the evening cocktail hour. Continue reading
