Low Carb Italian Haddock Bake

Ok I confess – I am overweight and I love Italian food.  One of the most successful diets I have ever been on is the Atkins.  I find the pounds melt off, I am full, and it’s easy.  I served this dish tonight to just the two of us along with green beans that I microwaved for 3 minutes.   We were satiated and it was delicious.  The haddock is always available on Deer Isle.  Tilapia would also work if you don’t happen to have the good fortune to live here.

Italian Haddock Bake

Cook time: 20 minutes

Ingredients:

¼ cube butter (melted)

2 chopped ripe tomatoes

4 tablespoons mayonnaise

1 cup shredded Asiago or Parmesan cheese

1 ½ lbs haddock filets

1 tablespoon Italian seasoning

Salt & pepper to taste

Preparation:

Preheat oven to 375 degrees. Grease 9 inch glass pan and place haddock filets at the bottom. Spread the mayonnaise evenly over the filets. Sprinkle Italian seasoning and salt and pepper over the mayonnaise. Place chopped tomatoes over the filets and then finally sprinkle the cheese over everything. Bake 20 minutes.

    After one more day of takeout subs, I am ready to do something like this! Making a grocery list for shopping tomorrow and will definitely be getting some fish. Time to stop the heavy winter foods and lighten up with lean protein and greens, yogurt, etc. You’re an inspiration.
